Wild Blueberry Vanilla Matcha Smoothie

Ingredients 1 cup unsweetened vanilla soy, oat or almond milk 1/2 cup frozen Wild Blueberries 1 teaspoon matcha green tea powder 1 teaspoon pure vanilla extract ½ frozen banana 1/2 cup ice cubes Instructions Combine all ingredients in a blender and pulse until completely smooth and frothy. Serve cold – enjoy!

Iced Golden Milk Latte

Ingredients 2-3 cups milk of choice like almond, macadamia, or coconut. 3 Tbsp. maple syrup 1 1/2 tsp. ground turmeric 1/4 tsp. ground cinnamon 1/4 tsp. ground ginger Pinch ground black pepper Pinch ground cardamom 1/4 tsp. vanilla extract Instructions Combine all ingredients in a cocktail shaker. Use 2 cups for a sweeter, more spiced drink; use closer to 3 for a milder version. Shake the mixture well and pour over ice into two serving glasses. If you'd prefer an "ombré" look, like in my photos, first pour half of the milk over ice into two glasses. Then, proceed with the recipe: combine remaining ingredients in a cocktail shaker with ice, shake well, and pour into prepared glasses.

INGREDIENTS 1 lb. lean ground chicken 1 medium zucchini, grated and squeezed well of excess moisture 1 clove garlic, minced 3/4 teaspoon kosher salt 1/2 teaspoon black pepper 1/4 teaspoon onion powder 1/4 teaspoon cayenne pepper 1 1/2 tablespoons canola oil or coconut oil INSTRUCTIONS 1. Combine all ingredients (except oil) and stir until just combined. The mixture will be wet. 2. Form into small patties, about 1 1/2 inches wide, and place on a plate. Blueberry Thyme Gin Fizz

INGREDIENTS 2 ounces Gin 1/2 ounce freshly squeezed lemon juice 1/4 ounce simple syrup more or less as desired for sweetness 1/4 cup fresh blueberries 1/2 teaspoon fresh thyme leaves Club soda Lemon slice or lemon twist, extra blueberries, thyme sprig to garnish INSTRUCTIONS In a cocktail shaker, muddle together the gin, lemon juice, simple syrup, blueberries, and thyme leaves. Make sure to smash the blueberries up well! Pour into a glass over ice. Top with a splash of club soda. Garnish with a lemon slice, fresh blueberries and a sprig of fresh thyme.

SIMPLE CUCUMBER SALAD WITH LIME VINAIGRETTE

Ingredients Salad: 3 cups sliced cucumbers 1 cup sliced red onions 1/2 cup chopped cilantro 1/2-3/4 cup crumbled feta cheese 1 cup chickpeas cooked, or garbanzo beans, optional Dressing: 1/4 cup extra virgin olive oil 1 lime juiced 1/2 tsp red pepper flakes 1/4 tsp salt black pepper to taste Instructions In a large bowl with enough room to gently toss the salad, combine the salad ingredients: cucumbers, red onions, cilantro, crumbled feta cheese, and chickpeas. In a small bowl, whisk the dressing ingredients together until the dressing is creamy: olive oil, juice of a lime, crushed red pepper flakes, salt, and pepper. You'll be able to add more salt and pepper to flavor the salad, if desired

What you will need: 1 lb ground sausage 1 bag dry coleslaw mix 5 cloves garlic, minced 1/2 tsp ground ginger 1/2 cup low sodium soy sauce sliced green onion Instructions In a large, deep skillet, brown sausage. Meanwhile in a small bowl, combine garlic, soy sauce, and ginger; set aside. Once sausage is cooked through, add dry coleslaw mix to skillet and stir to combine. Pour soy sauce mixture into the skillet and stir, continuing to cook over medium heat for about 5 minutes or until cabbage is wilted, but still a bit crunchy. Serve with sliced green onion.

Roasted Cauliflower Salad with Lemon Tahini Dressing

INGREDIENTS 1 head cauliflower 1/2 red onion 2 Tbsp olive oil Salt and Pepper to taste 1/2 bunch parsley LEMON TAHINI DRESSING 1/3 cup tahini 1/3 cup water 1/4 cup lemon juice 2 cloves garlic, minced 1/2 tsp cumin 1/4 tsp cayenne 1/4 tsp salt SPICED CHICKPEAS 1 15oz. can chickpeas 1 Tbsp olive oil 1/2 tsp smoked paprika 1/4 tsp garlic powder 1/8 tsp cayenne Salt and Pepper to taste INSTRUCTIONS Preheat the oven to 400ºF. Chop the cauliflower into small florets and place them on a large baking sheet. Slice the red onion into 1/4-inch strips and place them on the baking sheet. Cucumber Mint Gin Coolers

Ingredients 6 ounces gin 1 cup cucumber cut into chunks, plus a few thinly sliced for garnish 12 mint leaves plus more for garnish 2 tablespoons sugar or beet sugar ¼ cup fresh lemon juice Chilled Club soda to cap Ice Instructions In the jar of a blender, combine the cucumber chunks, the mint leaves, sugar and lemon juice. Puree until you have a smooth mixture. Fill two glasses with ice. Add 2 ounces of gin to each glass and the thinly sliced cucumbers. Fill the glasses to 2/3rds full with the cucumber mixture. Top with club soda and stir well. Garnish with fresh mint.
