Scrambled Eggs and Cottage Cheese


  • 2 eggs

  • ¼ cup cottage cheese

  • Fresh ground black pepper

  • ½ tablespoon butter

  • ⅛ teaspoon kosher salt

  • Finely chopped chives (optional)


  1. Crack the eggs in a medium sized bowl . Whisk together until well-beaten.

  2. Stir in the cottage cheese, kosher salt as well as a bit of fresh ground black pepper.

  3. Heat the butter over medium heat in a skillet. Make sure the surface is well-coated with the melted butter.

  4. Pour the eggs into the skillet.

  5. When the eggs begin to set, use a flat spatula to scrape sections of eggs to create folds.

  6. Continue to scrape occasionally until the eggs form soft folds. This should take approximately 1 to 2 minutes altogether.

  7. Remove from the heat before hardened.

  8. Garnish with the chives.

  9. Serve immediately and enjoy!
