Scrambled Eggs and Cottage Cheese
¼ cup cottage cheese
Fresh ground black pepper
½ tablespoon butter
⅛ teaspoon kosher salt
Finely chopped chives (optional)
Crack the eggs in a medium sized bowl . Whisk together until well-beaten.
Stir in the cottage cheese, kosher salt as well as a bit of fresh ground black pepper.
Heat the butter over medium heat in a skillet. Make sure the surface is well-coated with the melted butter.
Pour the eggs into the skillet.
When the eggs begin to set, use a flat spatula to scrape sections of eggs to create folds.
Continue to scrape occasionally until the eggs form soft folds. This should take approximately 1 to 2 minutes altogether.
Remove from the heat before hardened.
Garnish with the chives.
Serve immediately and enjoy!
