Banana Baked Oatmeal
2 cups rolled oats
½ cup pecan pieces (optional)
½ teaspoon allspice
½ teaspoon kosher salt
¾ cup mashed banana or 2 ripe bananas
1 teaspoon baking powder
1 ½ teaspoons cinnamon
1 ¾ cups milk of choice
¼ cup pure maple syrup
1 tablespoon pure vanilla extract
For serving: Banana slices, almond butter or peanut butter
Preheat oven to 375 degrees Fahrenheit.
Grease an 8 x 8 pan with coconut oil.
In a bowl, combine the rolled oats, baking powder, pecan pieces, cinnamon, allspice, and kosher salt.
Dump onto prepared pan.
In the same bowl, whisk together bananas, milk, vanilla, and maple syrup.
Drizzle milk mixture over oats.
Lightly stir with a fork.
Bake approximately 40 to 45 minutes (until top is golden)
Cool for at least 10 minutes.
Spread the top with almond butter or peanut butter.
Top with banana slices.
Serve and enjoy.
Store leftovers in refrigerator for up to 1 week and reheat in a 300 degree oven (or in the microwave) until warm.
