MUSHROOM & SPINACH CAULIFLOWER RICE


Ingredients

2 minced garlic cloves

3 cups of sliced mushrooms

10 oz packages of frozen riced cauliflower

1 tablespoon of soy sauce or coconut aminos

2-3 tbsp of olive oil

1/2 cup chopped onion

2 cups of spinach

Soy sauce to taste

Directions

1. Cook cauliflower rice according the package instructions. Heat olive oil in a skillet, then add onions and cook until softened.

2. Add mushrooms and saute until cooked.

3. Stir in the garlic.

4. Add cauliflower rice and the soy sauce. Stir until soy sauce is absorbed in the cauliflower rice.

5. Top with spinach, stir, and cook until it is wilted.

6. Serve and enjoy!
