MUSHROOM & SPINACH CAULIFLOWER RICEJennifer StawarzSep 20, 20201 min read Ingredients 2 minced garlic cloves3 cups of sliced mushrooms10 oz packages of frozen riced cauliflower1 tablespoon of soy sauce or coconut aminos2-3 tbsp of olive oil1/2 cup chopped onion2 cups of spinachSoy sauce to taste Directions 1. Cook cauliflower rice according the package instructions. Heat olive oil in a skillet, then add onions and cook until softened. 2. Add mushrooms and saute until cooked. 3. Stir in the garlic. 4. Add cauliflower rice and the soy sauce. Stir until soy sauce is absorbed in the cauliflower rice. 5. Top with spinach, stir, and cook until it is wilted. 6. Serve and enjoy!
