Tomato Cucumber Salad with Avocado, Mozzarella, and Basil Pesto


Ingredients

1/2 pound red cherry tomatoes or grape tomatoes, halved

1 cucumber , sliced

1/3 cup red onion , diced 1/2 pound yellow cherry tomatoes or grape tomatoes, halved 2 avocados , diced 8 ounces small fresh mozzarella cheese balls

For the Dressing:

Mix together fresh basil pesto (approximately 1/4 cup) with 1 tablespoon of lemon juice.

Directions:

Mix all ingredients together, season the salad with salt and pepper, and enjoy.
