Garlic Butter Ground Turkey with Cauliflower Skillet

Ingredients:

  • 1 lb ground turkey

  • 1/2 head cauliflower, cut into florets

  • 2 tablespoons vegetable oil

  • 1/4 cup low-sodium soy sauce

  • 2 tablespoons hot sauce

  • 1 tablespoon lemon juice

  • 3 tablespoons butter

  • 2 tablespoons minced garlic

  • 1 tablespoon onion powder

  • 2 teaspoons sesame oil

  • Fresh chopped cilantro or parsley

  • 1/4 cup water

  • Red chili pepper flakes

  • Lemon slices, for garnish

​Directions:

  1. Heat a large skillet over medium-low heat with one tablespoon of the vegetable oil. Saute the pre-cooked cauliflower florets in skillet, until slightly golden brown. Deglaze with lemon juice, then add in some fresh cilantro, and the salt and pepper (to taste). Toss to coat well and remove to a plate.

2. In same pan (rinse the skillet if cauliflower has burnt in the pan), melt butter with one tablespoon of the oil and cook ground turkey, crumbling the meat apart with a wooden spoon. When meat is no longer pink, add garlic, the onion powder and give a quick stir. Add the soy sauce, water, and the hot sauce. Continue to cook, stirring regularly, for a couple of minutes.

3. Push ground turkey to the side and return cauliflower to the pan. Reheat quickly then coat cauliflower in sauce. Add a drizzle of sesame oil, sprinkle with fresh chopped cilantro, red chili pepper flakes and then garnish with lemon slices.

  1. Serve immediately and enjoy!
