Garlic Butter Roasted Carrots


  • 2 pounds carrots , diagonally cut into about 2 to 3-inch pieces

  • 5 tablespoons butter

  • 4 garlic cloves , minced

  • 1/4 teaspoon salt

  • 1/4 teaspoon fresh ground pepper

  • chopped fresh parsley , for garnish


  1. Preheat oven to 425F.

  2. Grease a baking sheet with cooking spray then set aside.

  3. Cut up carrots and set them aside as well.

  4. Melt butter over medium-heat in large nonstick skillet.

  5. Add garlic and cook for approximately 3 minutes (or until lightly browned) stirring frequently. Be sure not to burn the garlic.

  6. Toss carrots with the garlic butter in the pan or pour the butter over them in a bowl. Toss until combined.

  7. Place carrots in one layer on the prepared baking sheet.

  8. Bake approximately for 22 to 30 minutes or until are tender.

  9. Taste and adjust for seasoning.

  10. Garnish with the fresh chopped parsley.

  11. Serve and enjoy!
