Garlic Butter Roasted Carrots


  • 2 pounds carrots (cut diagonally into about 2 to 3 inch pieces)

  • 1/4 teaspoon salt

  • 5 tablespoons butter

  • 4 garlic cloves , minced

  • 1/4 teaspoon fresh ground pepper

  • chopped fresh parsley , for garnish


  1. Preheat oven to 425F. Then grease a baking sheet with cooking spray and set aside.

  2. Cut up the carrots and set them aside.

  3. Melt the butter over medium-heat in a non-stick skillet or pan.

  4. Add the garlic and cook for approximately 3 minutes (or until lightly browned), stirring frequently. Be sure not to burn the garlic.

  5. Toss the carrots with garlic butter (either in the pan or pour butter over them in a bowl).

  6. Toss until combined.

  7. Transfer carrots to the prepared baking sheet.

  8. Arrange in one layer and bake for approximately 22 to 30 minutes (or until carrots are tender).

  9. Remove from oven and place on a serving plate.

  10. Adjust accordingly for seasoning.

  11. Garnish with fresh (chopped) parsley.

  12. Serve and enjoy!
