Apple Pie Breakfast Parfaits

Ingredients:

For the Apples:

  • 1 tablespoon coconut oil

  • 2 apples, chopped

  • 1 teaspoon maple syrup

  • 1 - 2 teaspoons cinnamon

For the Parfait:
  • 1/4 cup chia seeds

  • 1/4 cup quick oats

  • 1 1/4 cup unsweetened almond milk

  • 1/2 cup granola (what ever flavor you prefer)

  • 1/2 cup coconut yogurt

Directions:

  1. Heat coconut oil over medium heat. Once melted, add the apples, syrup and the cinnamon. Saute until the apples are softened and starting to caramelize, approximately 6 - 8 minutes.

  2. While the apples are cooking, stir together the chia seeds, almond milk, and oats, then set aside.

  3. Once the apples are done cooking, remove them from the heat and prepare parfaits. Divide the chia-oat pudding evenly among four jars. Top with 2 tablespoons of granola, 1/4 of apples and top with 2 tablespoons of coconut yogurt.

  4. Drizzle with a bit more maple syrup and sprinkle of granola if you wish!
