Healthy Summer Recipes & Drinks!

Happy SUMMER friends! It is the unofficial start to the picnic & pool party season. I know that our family can’t wait to get in the pool and relax on the beach for some sunshine! We have been waiting forever for the warm weather to arrive - today is the last day of my son's kindergarten year and it's SO bittersweet. The year literally flashes by and we all look forward to the sweet summer.

We love being outside and we also really love entertaining, drinks, and summer foods! Over the past couple years, Jarrett and I have really learned to clean up our food choices and make some healthier yet still delicious drinks, snacks and dinners. So as we head into summer full force, here are some of what you can find us eating outdoors this year.

We have 3 vacations planned this year so I'm going to be showing you how I pack our coolers. with clean food so we aren’t stuck at the food trucks! How are you planning to stay healthy this season?!

Guacamole

My favorite appetizer and it’s perfect served with organic tortilla chips! Hey, they're gluten free!

  • 3 ripe avocados

  • Juice of 1/2 fresh lime

  • 1 tbsp chopped cilantro

  • 1/2 red onion, minced well

  • 1 clove garlic, passed through a garlic press

  • Sea salt and fresh black pepper.

Cut avocados in half. Discard pits and scoop flesh medium bowl. Add remaining ingredients to bowl and mix until just combined. Don’t overmix!

This Clean Eating Coleslaw is a perfect dish to bring to a summer picnic! It’s way healthier than classic creamy coleslaws, and it’s just as good!

  • 1 small head cabbage, thinly sliced

  • ⅓ scallions, chopped

  • 2 carrots, grated

  • 1 clove garlic, minced

  • 2 tbsp apple cider vinegar

  • ½ cup fat free Greek yogurt

  • 2 tsp Dijon mustard

  • salt and pepper to taste

  1. In a large bowl, combine cabbage, scallions and carrots.

  2. In a smaller bowl, combine garlic, vinegar, yogurt and mustard.

  3. Toss dressing over cabbage mixture and combine well. Season with salt and pepper.

MY OTHER FAVORITE SUMMERTIME RECIPES!

Jarrett and I love to have cocktails! I'm not tip toeing around that fact - BUT there is a way to keep yourself in check and avoid all the unnecessary sugar and calories! FOR SURE, and you KNOW I found a way :)

Here are our favorite drinks that keep yourself "clean" as best as possible!

My best GENERAL advice is to avoid sugary drinks and super sweet mixers – sugar is addictive and causes the worst hangovers. Remember THIS too: for every cocktail you have, drink a glass of water. It will help keep you hydrated while you party and enjoy the weather!!

  • Grey Goose & Seltzer

  • Add ice & grey goose or any good quality vodka into a glass and top with flavored or plain seltzer. I like to add some cut up strawberries or cucumber and let them float around for extra flavor!

  • Spiked Seltzer Brand drinks

  • Doesn't get much easier than this. They are delicious, low calorie and refreshing. My favorite is the cranberry!

  • Fishers Island Lemonade FIZZ

  • 6 oz Fishers Island lemonade, 6 oz Pellegrino water, pour over ice & garnish with lemon and mint! **I will generally only have ONE of these. They are super strong and diluting them with the sparkling water cuts the sugar down! But SOOOOO GOOD!
