Healthy Burrito Bowl!

It’s such a beautiful thing when you LOVE what you’re eating. Number one because it is healthy. Number two because it tastes delicious. 

I’m a real-food eater. Full fat, good stuff, real ingredients. 

So when I give you a burrito recipe, you better believe it’s gonna taste amaze-balls. 

I whipped this up for lunch and meal prep today. 

Ingredients:

1lb ground turkey

1 cup brown rice

1 small red pepper, chopped

1/2 onion, chopped 

1 tsp Penzeys taco seasoning

1 tsp Penzeys Southwest seasoning

1 tbs Olive oil

Sea salt to taste 

1/2 avocado

1 TVs Organic sour cream

1/2 tbs Trader Joe’s organic taco sauce

Sauté onions and peppers in olive oil until soft. Remove and place to the side. In same pan, add ground turkey and all seasonings. Sauté until cooked. Mix with peppers and onions. 

In separate pan, cook brown rice. 

Serve turkey/vegetables over the rice in a bowl, topped with sliced avocado, sour cream and taco sauce. 

Makes approx 6 servings. 

I typically make a few burrito bowls for later in the week too - stick them in the fridge ready to take with me or ready for when I come home starving. This is the type of dish that can actually taste better the next day.
